Результаты исследования показали, что термическая обработка влияет на содержание указанных витаминов. При этом наибольшие потери тиамина при приготовлении продуктов составляют от 20 до 71,5%, а рибофлавина от 16,3 до 71,5%.</p></abstract><trans-abstract xml:lang="en"><p>The article presents the content of vitamins B1 and B2 in the most used foods: cereals, legumes, meat and lactic acid. The results of the study showed that heat treatment affects the content of these vitamins.
